Koo Koo Sabzi Recipe-Spinach Quiche Recipe


INGREDIENTS:

12 oz of fresh spinach or a package of frozen spinach

1/2 bunch of  cilantro

1/2 bunch of parsley

few sprigs of fenugreek (optional)

few sprigs of mint (optional)

1 large onion

few sprigs of scallions

4 tablespoons of canola, grape seed or olive oil

4 eggs

2 teaspoons of tumeric

salt & pepper

Koo Koo sabzi (kookoo sabzi) is an egg-based Iranian/Persian dish. Typically made of various vegetables, herbs, such as spinach, lettuce, cilantro, parsley, fenugreek and mint. Variations of the dish will include barberries and crushed walnuts.  Koo Koo Sabzi can be served as a main dish or as a side dish with cucumber and yogurts or pickles.

 

1.  Spinach,parsley and cilantro are washed and the stems are trimmed. Optional vegetables for both dishes are mint and Fenugreek.  Fenugreek has a mild distinctive aroma and is typically used in Indian and Persian recipes.                                  Chop the vegetables/herbs ;you may also use a food processor for a fine chop.

2.  Add salt and pepper to taste, 1 teaspoon of turmeric and combine. In a nonstick pan, drizzle olive oil and add the diced onions.  When onions are softened add vegetable mixture and scallions to saute.   Pour the vegetable mixture back into a bowl and allow to cool off for at least 15 to 20 minutes before adding the eggs.  Typically I’ll add 6-7 eggs,but sometimes more depending on the consistency. Add more salt and pepper to taste and another tablespoon of turmeric.  You can easily find turmeric in your grocer’s spice aisle or you can purchase by clicking on this link .  Once the pan is hot enough add 2 tablespoons of grape seed or canola oil.  Carefully pour the spinach frittata mixture into the pan and smooth out towards the edge of the pan. Once the edges of the frittata begins to sizzle turn down the heat and allow to cook for about 5-7 minutes. When a crust has developed on one side flip the frittata over and cook for a few more minutes on low heat.

SPINACH QUICHE RECIPE

INGREDIENTS:

4 eggs

2 tablespoons of sour cream

1 teaspoon of tumeric

1/2 tsp of corn starch

salt & pepper

Quiche crust recipe

Before working on the quiche filling I will prepare the crust the quiche crust recipe by blind baking the pie dough. Trim the edges of the pie crust, place aluminum foil over the dough and pour uncooked beans or pie weights.  The dough goes into the oven for at least 7 minutes at 425 degrees. After wards remove the pie crust from the oven remove the aluminum for oil and beans put the piecrust back in the oven at 350° and allow to bake for another 5 to 6 minutes.

In a nonstick pan, drizzle olive oil and add the diced onions.  Once the onions have soften add the vegetable combination and scallions and saute.   Pour the vegetable mixture back into a bowl and allow to cool off for at least 15 to 20 minutes before adding the eggs.  Typically I’ll add 3-4 eggs,but sometimes more depending on the consistency. Add more salt and pepper to taste and another tablespoon of turmeric.  You can easily find tumeric in your grocer’s spice aisle or you can purchase by clicking on this link .  Add 1/2 teaspoon of cornstarch;  this helps to absorb some of the moisture and 2 tablespoons of sour cream.  Mix and pour batter into the prepared pie crust. Smooth the surface with a wooden spoon or spatula, place in a 350° preheated oven for about 30 minutes.
