    Sponge Cake Batter
    • 2 1/2 cups Cake Flour10 oz if using a scale
    • 1 1/4tablespoons Baking Powder1 tablespoons + 1 teaspoon
    • 1 teaspoon Salt
    • 1/4 cup Sugar2 oz sugar if using a scale
    • 8 egg yolksroom temperature
    • 4tablespoons canola oilyou may also use vegetable or safflower oil

    • 1 1/2teaspoons vanilla extract
    Meringue
    • 8 egg whitesroom temperature
    • 1/2 teaspoon cream of tartar
    • 1 cup Sugar7 oz sugar if using scale
