Homemade Chocolate Chip Cookie Recipe

1. Put the butter and sugars in a bowl of an electric mixer fitted with the paddle attachment or use a handheld mixer. Mix on medium speed for about two minutes or so. You don’t need a mixer to get similar results you can also make this recipe by hand.  Follow instructions exactly

(The creaming step for cookies is purposely shortened  to minimize the amount that the cookies will rise in the oven.)

2. Reduce speed or stop the mixer and add vanilla extract, eggs & salt.  Mix until well Incorporated.  Add in your dry ingredients . When the  flour is no longer visible remove the bowl from the mixer stand,using a wooden spoon or spatula stir in the chips.

3. Place the dough on a a cold baking sheet lined with parchment paper. To ensure that your cookies are all the same size scoop up some batter with a spoon or an ice cream scoop. If using a spoon, scoop up a portion of the dough with one spoon then use the second spoon turned upside down to push the dough off the first spoon and onto the cookie sheet. Place the dough at least 2 inches apart.  Bake cookies until edges turn golden but center is still soft which is about 10 to 12 minutes.

(For crispier cookie bottoms place the cookies on the bottom rack for the last 5 minutes of baking)
4.Let the cookies cool on a sheet on wire rack for about a few minutes transfer cookies to rack let them cool completely

NOTE: You can store and baked cookies in the refrigerator or freezer as long as they are made using the creaming method. Form the dough into a log on parchment paper ,wrap well and tie ends. Cookie dough shaped in this manner stays fresh in the fridge for up to two weeks. For longer storage place them in the freezer.
