Spaghetti Sauce

Start with a 28 oz can of whole peeled tomatoes. Empty the contents into a bowl and remove the tomatoes. Roughly chop the tomatoes and add them back into the bowl.

During the summer months you can use the ripest and freshest tomatoes. Simply blanch them and peel the skin.

Heat a sauce pan, add olive oil and diced onions. Cook until the onions are soft and slightly caramelized. The great thing about this pasta sauce recipe is that it can be personalized based on your taste preference.
Add the minced garlic for a minute until fragrant. Add the tomatoes, sugar, salt and stir.
This is where you can tailor the sauce to your liking; add capers, black olives, crushed red peppers or green peppers.  As the tomato sauce simmers down and reduces, the flavors will become concentrated and pronounced.

On low heat, allow the sauce to simmer uncovered until reduced. This can take anywhere from 45 minutes to an hour.  You’ll notice the the color and character of the sauce change as it simmers down. Stir every 10-15 minutes. Taste and season right before it’s reduced.  This delicious traditional spaghetti sauce can be used for a variety of classic Italian dishes.
